We’re loving our Seasonal Speciali, featuring the warming Prima Pizza Salsiccia with fiery Calibrian N’Duja sausage meat, caramelised onions, Riserva cheese, and beautiful roquito pepper pearls.
N’Duja has humble origins; this sausage meat has long been a staple food for Calibrian farming families. The pork is seasoned with spices such as Calibrian chilli before being smoked and matured for up to two years. All this attention means that the unassuming looking sausage packs a punch when it comes to flavour. Relatively unknown in the UK a few years ago, it’s taken the UK foodie world by storm in the last couple of years, with top Italian chefs hero-ing it for its flavour and versatility!
