HOW TO MAKE A MARGARITA
Pizza with Mozzarella, Tomato and Basil
This is the mother of all pizzas, the simplest but best-loved. It is named for the 19th-century queen of Italy, Margherita, whose favourite it was. This is Italy’s most patriotic pizza, with the red, white and green ingredients symbolizing the Italian flag.

- 4 pizza dough bases on oiled trays or pizza pans (made from 1 Basic Pizza dough ball, you can find out how to make these on More recipes)
For the topping:
- 240 g (16 tablespoons) Tomato Sauce for Pizza (see page xx)
- 600 g fresh mozzarella cheese, diced,or grated mozzarella
- 24 fresh basil leaves
- pinch of dried wild oregano
- basil, to garnish
METHOD
Serves 4 as a main coure, 8 as an appetizer
Preparation time: 2 hours including dough making
Cooking time: 20 minutes
Preheat the oven to240°C/475°F/GasMark9. Turn it on at least 15 minutes before baking.
Spread the tomato sauce evenly over the pizza bases using the back of a spoon. Leave a little rim around the edges without sauce. Sprinkle evenly with the cheese. Dot with basil leaves and sprinkle with oregano.
Place in the pre-heated hot oven and bake for around 15 minutes, or until the cheese is bubbling and the crust has browned. Garnish with more basil, cut and serve immediately.
